If yours has the standard trans have you checked the clearance on the clutch pedal (i have a diagram showing how to do this if ya need it), it is possible for the clutch plate to stick to the flywheel if contaminated with oil/grease, i think you have the inspection plate at the bottom of the bellhousing, you can remove that and observe the operation of the clutch while someone depresses the pedal. After sitting for 7yrs a good workout may well settle things down also.
