What you have pictured there is the engine oil drain and fill. You take the plug out of the bottom of the pan and almost 5 gallons of engine oil will drain out. Put the plug back in and refill with 15W40 engine oil. Be sure to change the filter too. It's the white spin on filter that you can see in the top portion of the picture.
The hydraulic fluid drains out of the rear end. There is a plug in the bottom of the rear end housing. Be ready to catch 15 or 20 gallons.
There is a filter too. It sounds like you may be in over your head for that part. You might want to pay for a service call and have a tech show you how.
