Bob: It's all available in the IH operator's manual. If you don't have a manual, and you need help finding oil drain, you've got far more serious problems than any of the questions you asked. Find an IH 240 operator's manual and study it from cover to cover.
Hydraulic oil is separate from engine oil, it hold 5 quarts with filter, any good 10-30 oil, filter available most places the sell filters. They will a chart listing proper filter for 240.
The hydraulic system takes IH Hytran and there are a host of lubrication points you'll never notice without the manual, and I'd be willing to bet distributor lubrication is long overdue, probably far worse than any other lubrication point on tractor, including crankcase..
