I currently have my Jubilee down to the block - painting, replacing gaskets etc. I've been pretty meticulous about labeling where everything came from, putting bolts back in the hole they came out of etc. for easier reconstruction. I found a corroded out freeze plug on the side of the engine, replaced those. I guess what I'm saying is while you have it apart do some strategic replacing of parts that don't cost very much (thermostat, freeze plugs, gaskets, belt, etc). Will save you some heartburn down the road.
