May be running it too rich. Did you adjust it a bit with you installed the new carb? Are you over chocking it when you are starting and restarting?
You should not have the fuel valve open more than two full turns. Usually one and a half turns is plenty. If you open it up all the way you're sucking gas from the "reserve" which is at the bottom of the tank where all the dirt and rust settles. And that is what clogs up your filters and carb.
Running a few seconds and quitting sounds like a fuel flow problem to me. Have you checked and cleaned all THREE filter screens? There is on in the elbow connector between the fuel line and carb. One flat round one on top of the sediment bowl, and one cylinder shaped screen that sits on top of the fuel shut off assembly and fits up inside the gas tank? And if these filters are dirty, besides cleaning and/or replacing them, you need to drain and remove the tank and have it cleaned out. I took mine to a radiator shop to be boiled and steam cleaned. I replaced all the filters, the fuel line, the shut off valve assembly and the carb. Haven't had a fuel flow issue since.
