I bet that's not an official Yanmar manual because "float" is traditionally applied to a front bucket when you want to backdrag without any more down force than its own weight.

If there's one big rear wheel I'm guessing it's a rear mower. Without front wheels too it can't float so forget it. Adjust the wheel so the back of the blades are at the mowing height you want. Then adjust the hitch height so on level ground the front of the blades are about a quarter-inch lower than the rear and mow like that.

Hitch-height can change in use, so adhere a cheap level to the deck where you can see it from the seat, and adjust as necessary to keep the bubble where you set it.
