There's not much difference:
The generator must be reflashed
The regulator MAY need to be changed. The only real diff between neg and pos regulators is that "dedicated" neg or pos ones had built up contacts on whatever side sparked more. Some aftermarket regulators are "universal" ground
You'll have to change any electric gauges around--the ammeter, and reverse the coil for proper polarity.
the only caveat I can think of is that if someone found a rare pos ground alternator--unless you can easily switch the diodes they can't be easily converted.
